  • Vivian - Kung Pao Chicken Tacos

  • Amity - Mexican Shredded Chicken (Vivian made this in an early challenge, but I couldn't resist)

  • Amity - we did this Spicy Mexican Chicken first, but it was meh.  But used it for Mexican rice and it was great.  Everything is better with Salsa and chese.  Pulled this out of the fridge, salsa and black beans and extra chili peppers made it GREAT in tortillas after t was frozen for a bit.
