Ellis wanted a basic chili and this hits all the bases of a classic American chili. Very easy, and great as leftovers. Amity likes with raw onions, Ellis with cheese.
This sauce is fabulous, and on just brussels sprouts, or green bean or....
Owen likes his plain, Ellis and I like to punch them up, sometimes with double the spices and some heat. It takes about 18 minutes to get to 165 degrees.
This is the recipe that led Ellis to discover he likes Sloppy Joe's, I like to do half ground turkey. Great on a pretzel roll from Whole Foods.
This is a gift Bob Donnelly gave to Amity, it is surprisingly tasty on it's own, but rolls with variation. Last round I added extra tomatoes, tomato paste, a little tomato sauce, and some cauliflower rice. Yum. Good stock is a must.

This is much better if you use regular noodles -- we increased the sauce and added broccoli.
Wonton cups, where have you been all my life? Vivian made them long ago in a cooking class, but I just never caught up!

This was from Nagi's Recipetin.com site (she's a cook in Sydney, Australia). A favorite of Vivian, Amity and Ellis. We double it, but a cup of chipotle chilis is a lot. Ellis disagrees. :-)

This is chicken, cabbage and sweet potato in a savory sauce. Note, I did it without all the hard to find ingredients and it was still great. Ate it over a baked sweet potato, unexpectedly good..

Coconut milk and peanut butter, what's not to love? I added some cauliflower which was a great addition. I might even roast it next time.
Ellis is a fan of Sloppy Joe's and I decided on whim to try another version. He's sweet the way he'll come in and help. He liked this version too.
The endless quest for a non mayonaisse coleslaw finally bears fruit
This is exceptionally tasty -- make sure you don't cut the vegetable pieces too large, or fill the slow cooker too much (umm, yeah, don't double it). I want to try light coconut milk and powdered peanut butter. Really though, very tasty.

This is the recipe that made me rethink my negative attitude toward Spaghetti Squash. This was a treat.

When Ellis decided lentils can be tasty
This is the 3rd thing Amity has made in her Instant Pot. The Risotto was great, the chili meh, and this was great. 2 out of 3 is pretty good. I think this would work well in a regular pot or a slow cooker. I like this even more with 1/2 split peas.
Found on our quest for a good fried rice recipe, worth making rice so you have it "left over" -- an Ellis favorite.
Okay, Awesome is a lot to live up to, but it's darn good and very easy. We used it in the slow cooker with one cup of sauce, a chicken breast cooked for 3.5 hours and then shredded. Great on sandwiches.
Ellis made chicken for the first time, sautéing chunks that had been "velveted" -- and we used this sauce. Scrumptious. But maybe use less heat. Our eyes were watering something fierce. :-) Note: use less sugar, correct salt and rice vinegar balance if needed. Ellis says "brown the chicken!" Also, I may thicken the sauce in a saucepan.
Basically, it's 3/4 teaspoon of baking soda for every 8 ounces of chicken (breast cut up in slices or chunks). Leave for 20 minutes than rinse and dry. This makes SUCH a difference in the texture of your chicken in stir fries etc. Make sure you rinse completely, and Ellis says "brown your chicken for best flavor"
Vivian made this for the Thai challenge and jealous, I made it a few days later. It's wonderful! To be fair, I roasted broccoli and cooked some chicken breasts in the instant pot, and cut them up/shredded them. Yummy!

An Ellis favorite, and a great way to make ground turkey festive/less boring. Doesn't need all that stock, serves 10, and we added garlic powder and extra Worcestershire sauce. No peas for E.
Ellis and I have been wondering about making pickles, and Mike gave me an herb kit which seems to be exceptionally good at growing dill. So...
Making Risotto has always intimidated me, as has the Instant Pot. Combining the two is a match made in heaven - tasty and delicious.
Mushroom and walnut based, really flavorful. I want to make again, but I will work on making them a little more cohesive. Very tasty.

From Recipe Tin Eats, another with the option of Shaoxing Wine or Mirin. Really Great version of Fried Rice. Could use a little more soy sauce than I used, and Ellis likes the other recipe more because it's saltier. I like the extra dept of mirin or shaoxing wine.
I made a hybrid of the two
Ellis prefers it without nuts, and I would use a tad less lemon next time (though it disappears by the next day). Excellent side dish, and very easy to make.
This is really simple, easy and tasty. The cole slaw recipe with it was just meh, but doesn't compete with the chicken in the sandwich. I'd be tempted to use another recipe though. We love shredded chicken on pretzel rolls from Whole Foods.

Quinoa in the Instant Pot makes this easy, with roasted cauliflower. I added pine nuts since I had the. Yummy (if you like cold grain salads, which I do)
I used greek yogurt instead of sour cream, and didn't have any nuts. I really want to make this again. And thank you instant pot for making excellent cooked chicken breasts. Yummy.
I like pulled chicken, but pulled pork is so great. I made this in the crockpot and Ellis was thrilled with it. Coleslaw is required (see next recipe)

25 minutes at 425 degrees was just right. Added a touch more soy sauce to the reduction. So good.
Decided to try something a little different than my usual curried caulfilower.
Perfect for a first course for a dinner party, but you can have that luxury at home. I always forgot how sumptious roasted garlic is, mellow and rich.
I did the crockpot version, and used a one hour soak method for the Navy Beans. Next time I would rinse the beans after cooking to reduce the salt, and add more liquid (since it ended up as bean stew). Easy and yummy and perfect for that ham bone left over.
Weirdly, I like this even more than with regular noodles. I backed the zucchini spirals first, used red pepper flakes, extra onion and garlic powder, and a package of frozen peas. I made 1.5x the flour/water. It was Wonderful!

This seemed a little meh on its own, but added to rice with salsa and cheese, it was very yummy. I bet it would be good with spice refried beans.
I did 1.5 times the spices, and added extra chilis. Improves with sitting so make a day ahead if possible.
A big hit in the Glassman-Grosser household, Amity and Ellis are looking forward to trying it.
Ellis' new favorite thing. We used some of the New York Times recipe, and this one, and various others. We hand grated the potatoes, used starch, skipped baking powder. Very yummy.

The sweet is nicely balanced with the sour lemon, and savory cumin. I used extra garlic because I love it. Very easy. Oh, and I also used two boneless breasts.

Vivian is not a huge Sloppy Joe fan, but indulged her curiosity and was rewarded. On Amity's to try list.
Ellis wanted to make homemade pesto, and we had so much fun doing it. So much better, and easy!
I recommend using baby kale. This was very tasty, corn tortillas are a must.
This works well with the addition of broccoli, or roasted vegetables as a side.

Roasted Vegetables are always good -- I really enjoyed using cauliflower in this.

Simple but lovely, comforting and satisfying. Amity was happy with it!
This was a lovely change of pace. A good reason to keep those small bottles of white wine in the house.
A great use of peanut powder and spices, comes together quickly. We broiled them for 3-5 minutes a side, aiming for a perfect medium rare. Also popular with Ellis (and me too!).
This was the 2nd Jalapeno Chicken recipe I tried. The first was not memorable, but this one was a it. I love it when Ellis asks, "is there more?"
Ellis suggested we try making our own Nashville Chicken since we have no KFC close by, and he enjoys frying things. Evil it may be, but fried chicken is very taasty.
This was fantastic. We added a little extra brown sugar, based on the comments. Nicely balanced.

From our Thanksgiving Challenge, what I would make for Vivian if we had Thanksgiving, the two of us. My first try at Tiramisu and it's very, light and yummy. Sift Dutch Processed Cocoa on the top (and I had it on the bottom as well to make it come out more easily)
This is surprising good for such an easy and quick cookie. I would add a dark chocolate drizzle next time I make them.
We actually haven't made this with the crumb topping, Owen is a purist.
The pandemic led to a lot of banana bread, and after a while the boys were happy for a change of pace, and something easy to portion and carry.
The glaze is essential, I added extra lemon extract, lemon juice & drizzled lemon juice
Admittedly, oatmeal is an Amitything. This was super handy, breakfast all week. Very delicious.

I admit, I haven't made this. But y co-worker Anshalee had this for Christmas 2021, and loved it so much she asked for it for her birthday 6 weeks later. On my wish list for dessert making.
Mike found this recipe and making them for his birthday was a no brainer. No nuts so that Ellis would better enjoy them. Yummy. Add Cream Cheese frosting (see next recipe)
You can add less sugar, it just makes the consistency a little softer. All varieties are great! Sally's Baking Addiction is a great place to look for recipes.

Owen's favorite Pumpkin Bread recipe. I reduced the cloves by half, to 1/2 tsp, reduced the nutmeg to 3/4 tsp. and added 1/2 tsp of ginger. It makes two loves. They are wonderful!

A very classic recipe, dark and tasty. Although a mix always works most of the time, sometimes it's nice to do it from scratch. Owen picks buttercream, I prefer chocolate (the ganache recipe in the original cookbook is my favorite.)
The important thing is to beat it for a long time, to get air into it and make it light. Extra vanilla works too.
Huge Owen favorite. If I were sharing wtih Vivian, I'd be tempted to use some coffee in place of the water. :-)
